I was actually just thinking about sandwiches yesterday, but more about how I don't eat them NEARLY as much as I used to. It's all salads for me
That said, my general rules have always been:
- Lightly toasted bread
- BOTH mayo & mustard, but sparingly
- Plenty of cheese. Gouda if you have it, Swiss if it's going to melt.
- Arugula >Spinach > Romaine. Don't even come at me with kale or shredded iceberg.
- Press that sucker flat like a cuban. With the amount of stuff I want in a sandwich, unpressed just isn't going to fit in my maw.
It also came to my attention recently that not everyone knows about giardiniera? It's hot pepper, carrots & cauliflower, pickled and preserved in vinegar. Very Italian, and very good on MANY if not all sandwiches. Also on brats, hot dogs, pasta, pizza, etc etc.
