I was actually just thinking about sandwiches yesterday, but more about how I don't eat them NEARLY as much as I used to. It's all salads for me :roll:

That said, my general rules have always been:

- Lightly toasted bread
- BOTH mayo & mustard, but sparingly
- Plenty of cheese. Gouda if you have it, Swiss if it's going to melt.
- Arugula >Spinach > Romaine. Don't even come at me with kale or shredded iceberg.
- Press that sucker flat like a cuban. With the amount of stuff I want in a sandwich, unpressed just isn't going to fit in my maw.

It also came to my attention recently that not everyone knows about giardiniera? It's hot pepper, carrots & cauliflower, pickled and preserved in vinegar. Very Italian, and very good on MANY if not all sandwiches. Also on brats, hot dogs, pasta, pizza, etc etc.

Brie, medium sharp cheddar, Monterey jack, and assorted salami on a baguette lovingly warmed in the oven.

I was going to put some mustard on it but figured it would stand on its own. It did.

pumpernickel / vegan mayo / lettuce / cucumber / tomato / onion / mustard / pumpernickel
Proper thickness should be about 2-3 inches.
V8 and/or Weeping Willow Belgian wit

When I was about seven years old, we went to a reunion of the bachelor pad my dad (and about eight other guys*) lived in after he got out of the Navy. It was an annual thing, eight or nine families that sort of knew each other playing board games while the guys got drunk and reminisced. One of them offered me a V8, telling me it was "juice", so fuck yeah, juice! I took a huge gulp of salt and anger (or so it tasted at the time) and spat it out into the wet bar sink (I was little so I was sitting up there anyway, and it was the early 80s, so of course every house had a rumpus room with a wet bar) to raucous laughter from all the guys.

So I don't drink V8. Took a while for me to even come around to bloody marys.



* It was a really big house, so much so that the basement--in LA, I know!--had a large pyramid of beer cans that was continually added on to.

Guys GUYS I went to the Horseradish Store on Friday and got my special face-pain sandwich. A few notes:

  • The guy making it put basil aioli on one side rather than another slather of horseradish. I didn't ask why, figured it'd be interesting. It was pretty good.
  • The board CLEARLY says steak AND gruyere, but he forgot the gruyere. I decided to not mention it because there was enough going on with the aioli and stuff.
  • It was pretty tasty.

Tuna Sandwich(es) Rocco Style

The right amount of mayonaise
cracked black pepper
tiny bit of cayenne
garlic powder
drop a dill spear in after you mix it up so it gets some pickle juice goin'

I used to put it on bread with a slice of cheddar, but now I just dip chips into it or - preferably - make mini-sandwiches with triscuits

I go for the pickle on the side and just a hint of mustard in the mix. Dijon, not brown mustard because that's satanic.

Oh yeah, that's fine. Brown mustard and tuna though, eeeeccch.

The horseradish store is at Main and Folsom, btw. Highly recommend.

Mine calls for:

generous amount of mayo
cracked black pepper
thin-chopped celery
rough-chopped spring onion
bit of cucumber if you like that

I might try the cayenne though, that sounds interesting.

Sometimes I'll throw in some fresh lime juice if I have it and I'm feeling nasty.
